Instructions
Step 1
Heat oven to 425. In a large bowl, toss the squash with the honey, 1 tbsp. of the oil and a pinch of salt. Arrange the squash on one side of a sheet pan.
Step 2
Spread the onions on the other side of the pan. Drizzle the veggies with oil and Sprinkle with salt and pepper, tossing to coat. Roast for 15 minutes.
Step 3
In the same bowl, stir together the tarragon, garlic, 2 tbsp. of oil, 1.5 tsp. of salt and .5 tsp. of pepper. Add the chicken and toss to coat.
Step 4
After the veggies have cooked for 15 minutes, toss them well. Add the chicken, nesting the pieces in with the vegetables and roast until the chicken is cooked through, 30-40 minutes.
Step 5
Place the chicken on a platter. Drizzle the squash and onions with the vinegar and Sprinkle with salt and pepper. Serve.
