Healthy Vegan Peanut Butter Chocolate Balls

These chocolate peanut butter bites are so good! They are quite easy (and vegan/gluten-free!) They can be made with any other nut or seed butter, so if you're allergic to nuts don't worry. Hope you enjoy! Side Note: I used a regular tablespoon (the ones you eat with, NOT the ones you measure with!) so please use a regular tablespoon or else it won't work and the dough will be off.

Instructions

Step 1
First, mix together the almond flour, peanut butter, maple syrup, vanilla, and a TINY pinch of salt in small mixing bowl. Set in the freezer for about 5 minutes, just until it's a bit firmer and not sticky.

Next, use a half-tablespoon to scoop out little balls and roll them out. Set them in the refrigerator this time for about 30 minutes. I actually placed them on a parchment lined plate.

After that, microwave your chocolate in 15 second intervals, just until melted (be careful not to burn the chocolate).

Using a spoon, dip the peanut butter balls into the chocolate and back onto the parchment-lined plate. Then freeze for about an hour, just until the chocolate is set.
Step 5
Enjoy! I added a pinch of salt on top of each of them just to add flavor.
