Coconut milk tapioca pudding (no sugar added)

Is a low sugar healthy tapioca with fresh fruit as toppings. Store in refrigerator for up to 5 days in sealed container. You can make it less liquid by adjusting the amount of tapioca pearls and/or liquid in the recipe: 1. Use more tapioca pearls: The amount of tapioca pearls you use will affect the texture of the pudding. If you want a thicker pudding, you can increase the amount of tapioca pearls in the recipe. 2. Reduce the amout of liquid: if you are using too much liquid, the pudding may be too liquidy. You can reduce the amount of liquid (water or milk) in the recipe to achieve a thicker consistency. 3. Cook the pudding for longer. Cooking the pudding for longer will help it thicken up. Make sure to keep stirring the pudding as it cooks to prevent it from sticking to the bottom of the pan. 4. Let the pudding cool and set: Once the pudding is cooked, let it cool and set it in the refrigerator for a few hours or overnight. This will allow the tapioca pearls to absorb more liquid and thicken up the pudding .

Instructions

Step 1
Rinse the tapioca pearls in cold water and drain
Step 2
In a large saucepan, add the tapioca pearls and 950 ml of water. Bring to a boil, then reduce the heat to medium-low and let it simmer for 30 minutes or until the pearl become translucent

Add the can of coconut milk, salt and vanilla extract. Stir well and continue to simmer for another 10-15 minutes, or until the mixture thickens and turns into a pudding-like consistency.
Step 4
Remove from heat and let it cool for a few minutes before transferring it to serving bowls. You can serve it warm or chilled, depending on your preference

Top the pudding with fresh fruit or berries, if desired, and serve. Enjoy !
