Creamy Garlic Chicken

Instructions

Step 1
Pound the chicken breasts thin (about 1/4 inch) then season with garlic, salt, and pepper on both sides.
Step 2
Cook the chicken in the olive oil in a heated skillet for 3 minutes per side. Add more olive oil as needed. Place cooked chicken on a cookie sheet.
Step 3
Once chicken is all done, cook the diced onion in all the drippings for 10 minutes. Once caramelized add 5 cloves of minced garlic & cook two more minutes.
Step 4
Add 1 C. chicken stock plus two tablespoons Better than Bouillon chicken base and cook down for 10 minutes until it gets thick and golden brown.
Step 5
Add 2.5-3 cups heavy whipping cream, half a teaspoon of salt, half a teaspoon of black pepper, and quarter teaspoon ground thyme. Let thicken for 10 minutes before pouring over the chicken.
Step 6
Bake at 375 for 15 minutes.
Step 7
Serve with rice.
