Instructions

Step 1
Marinate your chicken. Start by tossing your chicken in a bowl with olive oil and the adobo spices. Cover and let the chicken marinate for at least 30 minutes. 4-6 hours preferable.

2. In a large pot over medium-high heat, heat oil. Cook chicken, turning occasionally, until golden brown, about 5 minutes per side. Transfer to a plate to keep warm.

3. Reduce heat to medium and cook onion, stirring, until softened, about 7 minutes. Add garlic and cook, stirring occasionally, until fragrant, about 1 minute. Add rice and cook, stirring occasionally, until toasted, about 2 minutes. Add vinegar and stir until evaporated, about 1 minute more.

4. Add broth, chiles, adobo sauce, oregano, garlic powder, onion powder, and remaining ½ tsp. cumin and ½ tsp. paprika. Return chicken to pot and bring to a boil, then reduce heat to medium-low and bring to a simmer. Cover and cook until rice is tender and chicken is cooked through, about 20 minutes.

5. Transfer chicken to a clean plate. Stir kale into rice mixture until wilted and stir in olives

6. Return chicken to pot. Top with cilantro
