Instructions
Step 1
Begin by salting both side of the chicken thigh, and peppering the flesh side only, on paper towel to draw out some moisture.
Step 2
Place skin side down in a cold cast iron or stainless steel pan, and then the heat to medium. This allows the fat to slowly render out. Cool for 15-20 minutes, until the skin side is golden brown, and crispy. The skin should naturally release from the pan.
Step 3
Flip the thighs over, and add your herbs and garlic. After 3-5 minutes, remove the thighs, and check the internal temperature is 175 degrees.
