Instructions

Step 1
Rub the pork rind dry with some kitchen roll
Step 2
Score the rind carefully with a sharp knife
Step 3
Sprinkle flakey salt on the rind and rub into the cracks that you made from scoring
Step 4
Place into a roasting tin with a layer of water in the bottom. I chop up a couple of carrots and throw in there to cook with the meat aswel
Step 5
I cook with the lid on for about 3hours on low about 160°. Then take the lid off and cook for another 45 minutes at 200° and hopefully this will finish off the crackling perfect
Step 6
Once done take out and leave to rest for half an hour Enjoy
