Instructions
Step 1
Mix the baking powder into the flour, add the heavy cream, add the sprite.

Step 2
Bring together with a metal spoon. It will be slightly sticky. If it’s too sticky, add 1 tbsp flour until lightly sticky.

Step 3
Tip onto a floured surface and gently bring together with your hands till it forms a combined dough 1” thick.
Step 4
Cut out scones using a cookie cutter no bigger than 4cm. Reshaping dough gently each time you run out of cutting space, and then cut out more.

Step 5
Bake on a lined baking sheet at 350f/175c for 10-15 mins until the bottoms are lightly browned. You can egg wash if desired.

Step 6
Take out, eat warm, or cool, with jam and some more heavy cream whipped till it's thick.
