Instructions
Step 1
Add the sugar and water into a high saucepan. Wisk together.

Warm over medium heat until the mixture starts to bubble (do not stir at this point!)
Step 3
Let the mixture cook until it reached a temperature of 172 degrees Celsius. This will take around 4-5 min.
You will see that the color starts to change.

If the mixture hits 172 degrees C, add in the butter (melted) en quickly stir together. After you mixed in the butter, remove from the stove.
Step 5
Slowly pour in the heavy cream (room temp) and keep stirring. The caramel will bubble up. Keep stirring until all of the cream is incorporated.
Step 6
Set aside to cool. The caramel will thicken as it cools. Transfer to a container.
