The "Jennifer Anniston" Salad. Quinoa, chickpea herbaceous mixed salad
This salad hits the spot EVERY TIME. The key is lots of HERBS, dont' skip the herbs. I modified the original recipe to my liking below. If you're not big on dressing add a bit first before the whole thing. I also sub pistachios for pumpkin seeds because $$ and it's just as good.

Instructions
Step 1
Cook your Quinoa and put in fridge. You want cooled quinoa for the salad
Step 2
Rince and chop your herbs.
Step 3
Cut the cucumber, shallots and add to a large bowl.
Step 4
To the large bowl add the garbonzo beans and herbs to the mix
Step 5
Add the cooled quinoa and feta and nuts
Step 6
Squeeze two lemons, add some olive oil and salt and pepper to taste, a small amount of dijon, and mix into salad.
