1 cpCornmeal
medium or fine ground

1 cpAP flour

1.5 cpsWhole Milk
Buttermilk Optional

2 tspbaking powder

¼ tspbaking soda

3 TbspButter
frozen & grated

1 tspsalt

0.25 cpSugar

1egg

Instructions
Step 1
Place 3 tbsp butter in the freezer
Step 2
In a large bowl, combine cornmeal and milk. (Let sit 15 minutes to hydrate the cornmeal)
Step 3
Combine remaining dry ingredients in a separate bowl and set aside
Step 4
Add eggs to cornmeal and mix lightly
Step 5
Pour dry ingredients into corn/ egg mixture and stir just to combine
Step 6
Grate frozen butter directly into the mixture. Fold gently to combine.
Step 7
Skillet: 400 degrees preheated, oiled 8/10" skillet
Pour mixture in and bake at 350 for 15-20 minutes

Step 8
8" round/square baking dish: (Oiled) 375 degrees 20-25 minutes

Step 9
Loaf Pan: (oiled)
350 degrees 28- 35 minutes
