Instructions
Step 1
Roast broccolini. Cook rice according to the directions on the package.
Step 2
In a small bowl, combine the Kodiak Cakes Mix, salt and lemon pepper.
Step 3
Butterfly-cut chicken and place in a large bowl. Coat with mix.
Step 4
Heat a skillet to medium high heat and add butter. Once melted, add chicken to the pan and cover. Cook for about 3-5 minutes per side or until cooked through and juices run clear. Add the lemon slices to the pan. Cook and flip continuously for 2-3 minutes.
Step 5
Divide the Lemon Butter Chicken evenly into the number of servings. Serve each one over ½ cup of cooked rice with lemon slices, fresh basil and ¼ of the roasted broccolini on the side.
