Spinach and artichoke chicken spaghetti squash

A real winner designed from what I had laying around. I’d probably sub out the stock for milk next time, but overall turned out pretty good

Instructions
Step 1
Cut your spaghetti squash into rounds and bake on 375 for 35 minutes
Step 2
Cube and season your chicken with bbq garlic seasoning (or seasoning of choice)
Step 3
Remove chicken and set aside
Step 4
Sautéed onion in olive oil
Step 5
Add in garlic and cook for one minute
Step 6
Add artichokes, tomatoes and spaghetti squash into the pan
Step 7
After that has cooked a few minutes and the veggies seem softened and heated up add the chicken back
Step 8
Now add in veggie stock seasonings and cheeses
Step 9
Stir until melted and let simmer a bit until it’s thicker up a bit
Step 10
Now top with some chives and eat it up!
