Instructions
Step 1
Heat olive oil in a medium non-stick pan over medium heat.
Step 2
Add the chicken, and sprinkle with 1 ½ tablespoons of cajun seasoning. Cook, stirring frequently, for 5-7 minutes, until cooked through.
Step 3
Remove the chicken from the pan and place in a clean bowl. Add the bell pepper and onion to the pan, sprinkling with another 1 ½ tablespoons of cajun seasoning. Cook for 5 or so minutes, until slightly softened.
Step 4
Add the tomatoes to the pan, cook for 1 minute until soft. Add back the chicken, toss everything up, then remove from the heat.
Step 5
Divide between four 2-cup capacity storage containers
Storage Instructions

Store in the fridge for up to 4 days.
To Re-Heat
Step 7
Heat in the microwave, then spoon the filling into a large tortilla and enjoy.
