Ingredients

800gchicken thigh fillets
200ggreek yogurt
2 tspdried oregano
2 tspdried mint
½ tspchili flakes
2garlic clove
1lemon

Step 1
Chop your chicken thigh fillets into large chunks.
Step 2
Tip the chicken chunks into a large bowl along with your greek yogurt, dried oregano, dried mint, chili flakes and a big pinch of salt. Grate in your garlic and the zest from your lemon. Give it all a good mix and leave to marinate for at last 1 hour, preferably overnight.
Step 3
Make the tzatziki. Grate your cucumber and pop it in a sieve set over a bowl. Add 1 tsp salt and give it a good mix. Leave it to drain for 30 minutes.
Step 4
Whilst your cucumber drains, prep the veg. Quarter, core and dice your tomatoes. Peel and finely dice your red onion. Roughly chop the olives and parsley. Place all the veg in a bowl and add your lemon juice and a pinch of salt. Mix to combine.
Step 5
Squeeze your cucumbers to remove any excess liquid, then pop in a clean bowl. Add your chopped mint, yogurt and the juice of your lemon. Season to taste with salt, then set aside.
Step 6
Heat the grill to high. Skewer the chicken onto the skewers. Place them on a baking tray under the grill and cook for 15 minutes, turning occasionally so they cook evenly.
Step 7
Warm the flatbreads and assemble.
