Instructions
Step 1
Mix sweet potato starch with water and mix well until it becomes soft and silky.
Step 2
Dice some garlic and ginger, slice green onion and cilantro (optional). Wash some leafy vegetables.
Step 3
Add cooking oil in a skillet on high heat and adjust the heat to medium. Simply pour the batter in the skillet to cook for a few minutes, then flip the pancake once one side turns white.
Step 4
Continue to cook the other side for a few more minutes. Remove the pancake and simply slice the pancake into small cubed slices.
Step 5
Add cooking oil in a pot on medium high, and put diced garlic and ginger in the pot to mix for a few seconds. Add water in the pot and bring it to boil with a pinch of Szechuan peppercorn.
Step 6
Once soup boils, add sliced potato starch cubes in the soup to cook, finally add some vegetable in the soup to cook for a minute. Season the soup with salt and chicken powder, garnish with scallion and cilantro before serving.
