Cream of laupele soup
This recipe traditionally uses laupele leaves, but here we use spinach.

Instructions
Step 1
Thinly slice the spinach leaves, place in the pot with boiling water. Cook them until soft.
Step 2
While spinach is cooking add the chopped onion, grated ginger and chopped garlic.
Step 3
After 10 minutes use a stick blender to puree the spinach mixture.
Step 4
Add coconut cream to Laupele mixture, season with salt and pepper to taste.
Step 5
Leave on a low heat while you do Step 6 and 7.
Step 6
Heat oil in a fry pan and once hot fry the sweet potato to make chips.
Step 7
Season sweet potato chips with salt and paprika.
Step 8
Ready to serve soup in a bowl and garnish with the sweet potato chips.
