KETO coconut, berry and lemon posset

Instructions

Step 1
In food processor add dates and blend them, afterwards blend nuts. Add nuts to dates and mix using fork. Add almond flour, cocoa powder and seeds and mix well. Transfer back to the food processor and add coconut oil, blend until it becomes more or less one consistency. Should be able to make a ball but crumbles as you push on it. Transfer to the glasses and use anything flat to smoothen the surface. Put away to refrigerate. Now prepare the mousse. Work fast as Agar Agar sets very quickly. Blend coconut milk, water, lemon and maple syrup until smooth. Transfer to the pan and add Agar Agar. Bring to boil and than boiled down for 1-2min. Take off heat, transfer to the clean dish and let it cool, but keep on mixing it to make sure the top doesn’t jello. Quickly prepare Berry Jam. Mix berries with erythritol and send over to the stove, bring it to 50°. Mix pectin with erythritol and drizzle the mixture into the berries. Boil down the jam for 2min. Take off heat and add lemon juice. Let it cool but keep on mixing it. Now assemble the Posset by putting half the mousse into the glass, put away into fridge to set for few minutes. Spread the jam and than purr the last top layer of mousse into the glass. Let it set overnight and than decorate as you wish! Enjoy! 🥥🍋🍓
