Instructions

Step 1
Beat butter in stand mixer till creamy
Step 2
Add sugar a little at the time, beating well after each addition.
Step 3
Add eggs one at a time, beating after each addition . Add vanilla and mix in.
Step 4
Sift together flour, soda, and salt. Gradually add to butter mixture, beating on low speed until blended.
Step 5
Divide dough in half, wrap each half in plastic wrap and chill for an hour.
Step 6
Preheat oven to 350. Roll out dough to 1/4 inch thickness on a floured surface. Cut out cookies with a 2 1/2 inch round cutter and place 1 inch apart on parchment paper lined baking sheets.
Step 7
Bake at 350 degrees for 10 to 12 minutes, or until edges begin to turn brown. Let stand on sheets for 5 minutes. Place on wire racks to finish cooling. Repeat procedure with rest of dough.
