Ingredients

For the Dough
5 ½ cupsall purpose flour
½ cupcocoa powder
1 tspnsalt
1 packetactive dry yeast
½ cupbrown sugar
¼ cupgranulated sugar
2 cupsmilk

For the Filling:
1 cupbrown sugar
2 stickbutter
room temp
2 tspncinnamon
1 tspnallspice
1 tspnginger powder
0.25 tspnnutmeg

Instructions
Preparing the Dough:
Step 1
-Place a small pot over medium high heat and brown the butter until it is golden and smells nutty. Remove from heat and add the milk. You want this mixture to be around 110*F so if there is enough residual heat to warm it thats fine, otherwise gently warm over low heat.
-To the bowl of a stand mixer add bot the sugars, the yeast and then the warm milk mixture. Allow to sit for 10 minutes.
-Add the cream cheese, egg and orange zest as well as the sifted cocoa powder, salt and flour.
-Mix on low with the dough hook attachment for at least 10 minutes.
-Cover the dough and allow to proof in a slightly warm place for 2-3 hours or until it has doubled in size.
Preparing the Filling and Assembling the Rolls:
Step 2
-Mix the ingredients for the filling in a medium bowl until well combined.
-Once the first proof is done, roll the dough out into a rectangle roughly 24 inches by 18 inches and evenly smear the filling, leaving about 1/2 inc at the top part of the dough without any filling.
-Roll the dough tightly into a log and keep it seem side down and cut into 9 large rolls, or 12 smaller ones depending on the size you like.
-Place into a well greased baking dish, cover with plastic wrap and allow to proof in the fridge overnight, or in the same slightly warm place as before for about 1-2 hours.
-After this second proof, bake the rolls at 350*F for 30-40 minutes or until they are just set in the middle.
-Allow to cool before frosting and serving.
Preparing the Frosting:
Step 3
-Using a hand mixer or a spatula, Mix all ingredients in a medium bowl until a smooth, spreadable texture is achieved.
-Generously ice each individual cinnamon roll before serving.
