Seasoned black beans, salsa and red pepper partnered with chicken make a robust and spicy meal. You can make this as spicy as you like depending on the salsa you use.

Instructions

Step 1
Preheat oven to 200 C / Gas mark 6.
Step 2
Arrange the chicken in a 3 litre casserole or a 23x33cm (9x13 in) baking dish.
Step 3
Combine the salsa, red pepper, cumin, lemon juice, chilli powder and garlic. Pour the mixture over the chicken.
Step 4
Pour the black beans on top and cover.
Step 5
Bake in the preheated oven for 1 to 1 1/2 hours. Serve with rice or tortillas if desired
