One Ingredient Crispy Noodle Cakes

If you didn’t already love soba noodles, I promise that you will now! These noodle cakes are easy to make, healthy and perfect for topping as you would rice cakes. Mix them up by adding your choice of seasonings and toppings!

Instructions
Step 1
Bring water to a boil in a saucepan. Cook soba noodles according to package instructions and drain.
Step 2
Add noodles to a large bowl. Optionally add seasonings (salt, pepper, curry powder and/or garlic powder) and mash together with your hands until thick and clumpy. This should take at least 5 minutes.
Step 3
Roll into 10 balls and flatten/shape into circle. Set in the fridge for 30 minutes.
Step 4
Place cakes on a non-stick frypan on medium-high heat and cook for 3-5 minutes on each side until slightly browned and crispy. Optionally shallow fry in oil for extra crispness.
Step 5
Top with your choice of toppings and enjoy! My favourites are avo, nori and vegan mayo. Hummus, tahini or a peanut sauce also work.
