Mango Milk Pudding (المهلبية بالمانجو)

Mahalabia is a classic Arab milk pudding, and topping it with mango and toasted cashews makes it so delicious and a refreshing treat!

Instructions
Step 1
Combine all of your pudding ingredient in a pot and whisk over medium high heat until the mixture has thickened and has a pudding-like consistency.
Step 2
Remove from heat and transfer to a bowl. Cover with siran wrap and allow to chill in the fridge for at least 30 minutes.
Step 3
Cut your mangos and add to a blender or food processor along with the 1/4 sugar. Blend until you have a smooth mango purée (add 1 tbsp of water at a time if it’s too thick to blend). You can sieve the purée to get rid of any left over mango chunks.
Step 4
Optional: chop and toast your cashews, or any other nut of choice.
Step 5
Assemble: in a glass/dessert cup, start with a tbsp of chopped nuts, then add 1/2 cup of the pudding, and finish with 2 tbsp of mango purée. You can change the ratio of pudding and mango based on your liking and size of the cup you’re using.
Step 6
Let it chill in the fridge for at least 10 minutes as it tastes better when it’s cold. Enjoy!
