½ cupwater
cold

9gunflavored gelatin

6egg yolks

300mlcondensed milk

370mlevaporated milk

1 tspvanilla extract

Instructions
Step 1

Mix the following ingredients. Then set aside and let it bloom.


Step 2

Mix the following ingredients in a sauce pan.




Step 3

Incorporate with the gelatin mixture and cook on a low flame. Stir constantly until it thickens and boils.
Step 4

Strain to remove lumps
Step 5

Pour the mixture into cups. Poke to remove bubbles. Chill for at least 5 hours.
Step 6

Mix the ingredients and set aside.


Step 7

Melt the sugar until amber color. Add the water, then the cornstarch mixture. Stir constantly until it thickens and let it boil for 2 mins,


Step 8

Put on top of the cream base and chill for at least 2 hours.
