Ingredients

TO SEASON THE MEAT
TO COOK
1 cupbeef broth
or a can beef consomé
½ cupapple cider vinegar
3limes
juice of
3chipotle peppers in adobo sauce
chopped, 4 if you want more heat
5cloves garlic
chopped
1 tablespoonground cumin
1 tablespoondried oregano
¼ teaspoonground cloves
1 packetsazón Goya with saffron
3bay leaves
TO PREPARE THE TACOS
Instructions
Step 1
Season beef chunks with salt, pepper and garlic powder on all sides.
Step 2
Heat oil in a large skillet over high heat. Add beef in batches; cook until browned/seared. Transfer beef to a pressure cooker.
Step 3
Combine beef broth, apple cider vinegar, lime juice, chipotle peppers, garlic, cumin, oregano, cloves, and Goya packet in a bowl and mix well. Pour over beef in the pressure cooker. Stir in bay leaves.
Step 4
Pressure cook on high for 25-30 minutes until beef is fork-tender.
Step 5
While meat is cooking, finely chop the red onion and the cilantro. Slice the remaining two limes into wedges. Set aside
Step 6
When meat is done cooking, discard bay leaves. Remove beef from pot and shred using 2 forks. Return beef to the pot to marinate in the sauce for at least 10 more minutes before serving.
Step 7
Heat tortillas in a skillet or toaster oven.
Step 8
Serve the barbacoa meat in the tacos and garnish with chopped red onions, cilantro, cotija cheese, and a splash of lime juice from the wedges
