Ingredients
4 servings
2 cupsvegetable broth
or chicken broth if you prefer
2 tspsesame oil
1 tspginger paste
1 tspminced garlic
3 Tblssoy sauce
1 Tblsrice vinegar
1 tspred chili paste
1 tspbrown sugar
1 boxlo mein
or your preferred noodle
½ cupcabbage
thinly sliced
1red bell pepper
finely chopped
1 cupcarrots
thinly sliced or grated
2 cupsbroccoli
small chop
2 tblssesame seeds
½ cupgreen onions
finely copped
2chicken breasts
optional, shredded
½ cupteriyaki sauce
Instructions
Step 1
Marinate the chicken with teriyaki sauce for 30 minutes and bake in air fryer or oven. While that is cooking, break up noodles and add to Instant Pot. For the sauce, whisk together broth, sesame oil, ginger, garlic, soy sauce, rice vinegar, chili paste, and brown sugar. Pour over noodles. Add cabbage, bell pepper, and carrots. Put lid on, valve on 'sealing' and cook on high for 4 minutes. Quick-release steam once the cook time is up. Mix it up and add broccoli, put lid on, and let it sit for about 10 minutes (until broccoli is desired tenderness). Sprinkle with sesame seeds and green onions. Top chicken with extra sauce if desired and put on top of noodles
