Instructions
Step 1
Slice the chilli, courgette and spring onions. Zest the lemon.
Step 2
Bring 800ml of water to the boil in a large saucepan.
Step 3
Add the vegetables, spaghetti and tomatoes, 2 tbsp of olive oil and lemon zest. Season with a big pinch of salt and pepper.
Step 4
Bring to the boil and simmer for 10 minutes, stirring occasionally whilst cooking.
Step 5
Once all the liquid has absorbed and the spaghetti is cooked, drizzle with the remaining olive oil and serve.
