The Chole
Tadka
¼ cuppeanut oil
or mustard oil
2white onions
diced
1 ½ Tbspcumin seeds
3 inchginger
knob, minced
8curry leaves
1 TbspHimalayan salt
tomato paste
½ cupbirds eye chili
sliced thin
2habaneros
optional
¾ Tbspturmeric
2 ½ Tbspgaram masala

Instructions
Cooking Chole
Step 1
wash the chole thoroughly
Step 2
Soak the chole in water overnight
Step 3
The next day, add the chai in a tea strainer to the pressure cooker. Add the cinnamon stick and salt
Step 4
Close the lid and pressure cook until about 15 whistles ~30 mins
Tadka
Step 5
Mise en place your veggies
Step 6
Heat the oil and add the chopped onions and cumin seeds. Can add a little salt to speed the process
Step 7
When onions are translucent and beginning to brown, add the ginger and curry leaves. Continue cooking over medium-medium low heat
Step 8
When onions are significantly browned, slightly charred, add the tomato paste and chilies. Add up to half a cup of water to help break the tomato paste
Step 9
Add the spices: turmeric, garam masala, salt. Mix well and let it cook down with a bit of water to scrape up all the bits
Finishing Chole
Step 10
When tadka and chole are both done, put the tadka into the pot of chole
Step 11
Add more water as needed to scrape up the tadka, and to add back water to the chole
Step 12
Add the amchur and mix well
Step 13
Cover back and let it heat for a few minutes to emulsify everything
Step 14
Shut off heat and serve hot with roti, puri, or rice!
