Instructions

Step 1
Put oil in large measuring cup.
Step 2
Wash zucchini. Trim the ends, then chunk. Measure 2 cups into the large measuring cup, using displacement.
Step 3
Add to a food processor, along with the eggs and vanilla. Blend.
Step 4
Add sugar and blend.
Step 5
In a mixing bowl, stir together flour, baking soda, and cinnamon.
Step 6
Add wet ingredients to the mixing bowl, and stir together.
Step 7
Grease and flour loaf pans. (Use 2 regular, or 3 small.) Pour batter into loaf pans.
Step 8
Bake at 350° for 55-60 minutes for full-sized loaves; 40-45 minutes for small loaves. Can also make 2-2.5 dozen muffins; bake 18-20 minutes for muffins.
