Instructions
Step 1
Heat a large frying pan and add the oil.
Step 2
Trim the fat from the steak, add to the pan and cook for 2 minutes.
Step 3
Place the steak into the pan, and leave it for 4/5mins, check the steak has caramelised then turn it over and cook the other side after 2 minutes.
Step 4
Peel the garlic, then using a knife crush the garlic.
Step 5
Add the butter to the pan, the sprig of thyme, and crushed garlic, and allow the butter to melt.
Step 6
Once the butter has melted, tilt the pan, and based the steak with the melted butter for 2 minutes.
Step 7
Remove the steaks from the pan with the garlic and thyme and rest on a baking tray.
Step 8
Add the mushrooms to the same pan and cook in the butter for 5 mins.
Step 9
Cut up the asparagus into approximately 25mm pieces, add to the pan, and cook for 5 mins.
Step 10
Pour in the beef stock and allow to simmer and reduce for 5 minutes.
Step 11
Pour in the cream and add the mustard and stir, leave to simmer, and thicken.
Step 12
While the sauce is thickening place the steak onto a chopping board and thinly slice.
Step 13
Once the sauce has reduced and thickened add in the steak slices, coat in the sauce and simmer for 2 more minutes.

Serve with rice, spaghetti, or couscous,
