Mushroom & Bok Choy Vegan Lasagna

Ingredients
6 servings

1 jarmarinara sauce
large

1eggplant
large
1 BOKCHOI
LARGE

2FRESH MUSHROOMS
CONTAINERS

LASAGNA NOODLES
NO BOIL

OLIVE OIL

Garlic

Salt

pepper
Cashew "Cheese"
Instructions
Step 1
chop and cook all the vegetables in a large pot until soft
Step 2
Make cashew "cheese"
Step 3
Assemble lasagna in pan, layering sauce, noodles, veg, cheese (repeat), making sure to reserve enough cheese to finish with dollops on top.
Step 4
Cover with foil and Bake at 450F or until bubbly and golden brown
For the "Cheese"
Step 5
Soak cashews in water for at least 2 hours (or overnight)
Step 6
Add all ingredients to high powered blender or food processor
Step 7
Blend until smooth
Step 8
Season to taste & re-blend if necessary
