Ingredients

16 ouncesdry pasta
0.5 x 16 ouncesilken tofu
packet
1 x 25 ouncemarinara sauce
jar
¼ cupextra virgin olive oil
1 ½ tablespoonsnutritional yeast
1 ½ cupsfrozen green peas
6garlic cloves
minced
1 ½ teaspoonscrushed red pepper
optional
salt
to taste
freshly ground black pepper
to taste
Vegan parmesan
for serving, optional
Instructions
Step 1
Preheat the oven to 375ºF.
Step 2
Cook the pasta according to the directions on the packet until al dente.
Step 3
Transfer the tofu to a blender. Blend on high until smooth.
Step 4
Transfer the cooked pasta to a large baking dish. Add the blended tofu, marinara sauce, olive oil, nutritional yeast, peas, garlic, and crushed red pepper. Add salt and freshly ground black pepper to taste.
Step 5
Bake the pasta uncovered for about 15 minutes or until warmed through. Top with vegan parmesan for serving.
