Chorizo & Mozzarella Omelette with Olive Salad
Easy omelette meal for one, served with a simple but flavoursome side salad. Use black or green olives and tapenade depending on your preference!

Instructions
Step 1
Chop chorizo into cubes or slices. Fry in a pan on medium heat without oil
Step 2
Once the chorizo is crisped, pour over the beaten eggs and sprinkle with mozzarella. Cook omelette until set, then fold in half and cook for further 2-3 minutes on each side
Step 3
Chop the olives and tomatoes, and toss with the bistro salad and the olive tapenade
Step 4
Serve the omelette with the salad on the side, seasoning to taste
