For the sauce:
2 slicesham

Step 1
Cut the ham slices finely.
Step 2
Clean the onion, wash it, cut it finely and saute covered, over low heat, with the finely sliced ham, in olive oil.
Step 3
Wash the bell peppers, remove the spines and seeds, cut into cubes and add to the pan with the onions and ham. It is prepared covered, on low heat for 10-15 minutes.
Step 4
Wash the tomatoes, peel them and remove the seeds, after which they are finely chopped and added to the pan with the other cooked vegetables. Season to taste with: salt, pepper and paprika. It is prepared covered, on low heat, for 15 minutes.
Step 5
When the sauce is ready, pour it into a heat-resistant (or ceramic) dish, then put it in the oven for 10-15 minutes to reduce it a bit.
Step 6
Meanwhile, grate the cheese and fry the slices of chorizo (sausage) in a little oil and over low heat. When ready, the slices are removed on a plate and left to wait.
Step 7
When the sauce has reduced a little, remove the pan from the oven and make four indentations in which to put the grated cheese.
Step 8
Put an egg in each of the holes and then put the pan back in the oven.

Add the slices of chorizo (sausage) and decorate with green bell pepper, finely chopped, or with chopped parsley,
