Creamy, Rich Low Calorie Tomato Soup

Ingredients

4can whole tomatoes
3 cupsvegetable stock
200mlliquid cream
1yellow onion
large
5garlic cloves
large
salt
to taste
pepper
to taste
1 teaspoonthyme
1 teaspoonoregano
2 tbsnolive oil
1 tbsnButter

Instructions
Step 1
Start off by dicing the onion and garlic (not too finely) In a pot on medium heat, add in the olive oil and butter and wait till both have combined by stirring constantly. In that fry the onion till translucent, then add the garlic (be careful not to burn the garlic)
Step 2
In that same pot, add in the whole tomatoes from the cans and stir for about 2 minutes (don't worry about breaking up the tomatoes, that will come naturally)
Step 3
Now add the stock and stir, at this point you can lower the heat (you want the sauce to have small bubbles to form while cooking)
Step 4
Now to add the dry ingredients, add the sugar(to balance the acidity if needed) salt, pepper, tyme and oregano and stir well. Close the lid and let the soup simmer on the the stove for 30 mins, stirring the pot every 10 mins.
Step 5
After the 30 minutes, remove the heat completely and prepare to blend the mixture. Blend the mixture till almost smooth with a hand blender and then add the cream in and blend again till completely fine and smooth (if using a blender, follow these steps but instead transport your tomato mixture carefully to your blender.)
Step 6
Finally add in any extra spices you think it might need to your liking like salt and pepper. If your soup is too acidic then add another spoon of sugar to balance that. Enjoy!
