Step 1
Sort and wash your navy beans this will ensure no rocks or rotten beans are in the soup. Soak beans overnight in the refrigerator or for 24 hours. Add your beans to a a large pot (we used 3 cups of navy beans) and add about 6 cups of water or until there is about 3 inches from the water to the top of the pot. *NOTE* You want to make sure you do not add too much water as this will overflow when the beans start to foam up about 45 min in. Remove the white foam that appears on top of the beans as these are full of gas, however, you may not get very inch of foam and that is ok, you do not want to remove a lot of water in the process. Allow your beans to cook 1.5 hours on medium high heat and then add your cooking oil, followed by your seasonings and tomato paste and mix to combine. Let soup simmer w/ seasonings, oil, and tomato paste for 15 min. Add cut vegetables and stir again. Cook for 30-45 min or until vegetables are soft and beans are completely cooked (they should be fully cooked before you add your veggies in). Serve and enjoy!
