Instructions
Step 1
In a sauté pan over medium low heat, melt butter.
Step 2
Add shallot and cook until they begin to soften.
Step 3
Add garlic and a pinch of salt. Stir frequently, cook until fragrant.
Step 4
Remove from the heat and add herbs, 1/4 tsp each of black pepper and salt.
Step 5
Allow mixture to cool to room temperature
Step 6
In a large bowl, whisk your egg. While whisking add your cooled shallot/ herb mixture, including all the butter from the pan.

Add ground beef and thoroughly combine with egg mixture. *Use a thick wood spoon or your hands for best result*

Sift in the flour and continue mixing.
Step 9
Mix/ kneed your mixture for 4-6 minutes.
Step 10
Place your meat onto a lined sheet pan.
Step 11
Cover with parchment or cling wrap and roll out to a 1/8th to 3/16th thick sheet.

Leave covered and refrigerate 2-3 hours.
Step 13
After chilling, remove top cover. Place cheese on one half of your meat.
Step 14
Fold empty side over the top and pinch closed.
Step 15
Over medium/ high direct heat, cook one side of your patty. 3-5 minutes for the one lb patty.
Step 16
Carefully flip and finish cooking indirectly (325-350 degrees) for 20- 25 minutes.
Step 17
Allow to rest 5 minutes before cutting and serving.
Step 18
Great with toasted bread or hearty crackers.
