Good version for meal prep as there's no lettuce and stuff that'd get ruined in freezer. How long Prep takes depends on how fast you are at chopping and multi-tasking, I'm just slow.

Step 1
Slice and prep vegetables. Lengthwise or dice is up to your preference.

Add oil to pan and heat it up, when hot enough cook the chicken breasts. If you're using ready made frozen, then just cook as is. If it's raw meat, add spices, salt and pepper and preferably let it marinate for at least 30min first. Once cooked, remove from pan and let rest.

While the chicken is cooking, it's a good time to prepare the parchment Paper and tinfoil to wrap them in, if you're freezing them. If not, 1 layer is enough.
Step 4
Keep a little bit of oil in the pan, about 1tbsp, and add the vegetables. Cook until the onions and bell peppers are softened, add spice mix and a pinch of salt and cook for another minute. Remove from heat.

Time for assembly! Lay flat a tortilla, use the back of a spoon or butter knife to spread sour cream, then layer in the vegetables and slices of chicken, cheese optional. Roll and wrap. Repeat for all the wraps.

If you're freezing them, make sure you wrapped them with both parchment then tinfoil, and store inside freezer friendly box or bag and freeze.

When thawing, remove the tinfoil, heat in microwave for 2mins, then ideally toast it on a pan until browned on two sides, optional step.
