Step 1
Marinate diced chicken in paprika, pepper, salt, garlic powder to your pleasing and add 1/2 cup of red salsa. Mix until chicken is evenly coated. Cook over medium heat for 20 minutes until thoroughly cooked.
Step 2
While the chicken is cooking, sauté your corn in a separate dish with garlic, pepper, and salt until slightly blackened. Set aside.
Step 3
Thinly slice two corn tortillas into strips and sauté in olive oil until crispy. You can use the same pan as you did your corn. They will form a chip like consistency and become slightly blackened. These will be served on top of your bowl. Set aside.
Step 4
Once the chicken is done, make a bed of romaine lettuce and top with chicken, peppers, corn, tomatoes, and crispy tortilla strips. Drizzle with sour cream and green salsa and top with a slice avocado.
