Ingredients
8 servings
1 lbitalian sausage
16 ozcan no salt added diced tomatoes
1 x 16 ozcan chickpeas
2zucchini
med, sliced
1onion
med, sliced
10 ozcan low sodium condensed beef broth
1 cwater
½ tspdried basil leaves
Instructions
Step 1
Cook and stir sausage and onion in a 3 quart saucepan until sausage is browned; drain
Step 2
Drain chick peas
Step 3
Add the chickpeas and all the remaining ingredients to the pot with your sausage
Step 4
Bring to a boil
Step 5
Cover, reduce heat and simmer until the zucchini is tender, about 5 mins.
Step 6
Sprinkle with parmesan cheese if desired
