Whipped feta with roasted tomato dip

This dip is absolutely delicious with roasted tomatoes and garlic , olive oil and creamy feta. Perfect for entertaining or an appetizer.

Instructions

Step 1
Preheat oven to 350°
Step 2
Add tomato, onion, the garlic bulb, and thyme and rosemary to a sheet pan. Drizzle with 2 tbsp olive oil, salt and pepper. Make sure to drizzle oil in the garlic bulb
Step 3
Bake 30-40 minutes until the veggies are roasted
Step 4
When that’s finished to a food processor add the feta, the roasted garlic cloves, the thyme leaves, honey, onion, 2 tbsp olive oil , the zest and juice of the lemon, and salt and pepper taste. Blend well until smooth, add more oil if needed if it’s too thick.
Step 5
Add to a bowl and top with the roasted tomatoes, add a drizzle of olive oil on top
Step 6
Slice the baguette and add to a sheet pan, drizzle olive oil and salt and pepper on top. Bake for 10-12 minutes
