Step 1
1. Chop onion and tomato. Add them to a bowl and mix.

2. Cut remaining vegetables - carrots and zucchini. You can use a combination of vegetables to your liking.

3. Tear a piece of foil. Make sure it is long enough to fold in half with some space for it to inflate as the fish cooks.

4. Pre heat your comal on the stove.

5. Add oil spray to the bottom and add the onion and tomato mix.

6. Season both sides of the tilapia to preference and add to the top of the onion and tomato mix.

7. Add carrots and zucchini on top of the fish and season to preference.
Step 8
8. Add a small layer of oil spray and finish with cilantro.

9. Fold the foil and fold the edges. It is best to double fold to avoid spills.

10. Add the fish to the comal and bring the heat down to low.
Step 11
11. Cook the fish for 13-15 minutes depending on the thickness.

12. Remove from the comal and allow it to cool down for 3 minutes before opening. The foil will be hot.

13. Enjoy alone or add a side of choice - white rice, potatoes, etc.
