Instructions
Step 1
PREHEAT OVEN TO 475°F

Step 2
stir all starter ingredients together and cover to rest for at least 2 hours (overnight best)

stir starter down then add a little over half of the flour then salt.


Step 4
let rest for 12-15 minutes then stir again
Step 5
knead the dough for 10-12 minutes adding the rest of the flour as needed
Step 6
place dough in a lightly greased bowl and cover w/ lightly greased plastic wrap for 1-2 hours (if done in fridge overnight allow dough to come to room temp)
Step 7
gently deflate dough and form into one large loaf
Step 8
place cornmeal on parchment paper

Step 9
cover w/ lightly greased plastic wrap again for 45-90 minutes
Step 10
dust some flour over dough then score
Step 11
spritz dough with water then place in oven. repeat every 5 minutes for 15 minutes
Step 12
reduce heat to 425°F once placed in oven
