Instructions

Step 1
Preheat oven to 425 In a small bowl, combine chili powder, salt, pepper, and turmeric
Step 2
In large roasting pan toss vegetables and garlic with olive oil
Step 3
Sprinkle with chili powder mixture; toss again to distribute seasonings
Step 4
Roast vegetables uncovered for 30 to 35 minutes or until lightly browned and tender stirring once or twice
Step 5
Remove from oven
Step 6
Add spinach
Step 7
toss just until spinach is wilted.
