Creamy Chicken and Chorizo Rigatoni

I combined the best of two recipes to create a creamy, meaty, delicious pasta dish. Quick and easy. If I can DIY than anyone can.

Instructions

Step 1
Add 1 tbsp oil to a pan, cut up chorizo into slices and and fry until the oil has been released. Remove and set aside.
Step 2
Dice chicken into small cubes and add to the pan
Step 3
Cook until the chicken is browned and set aside.
Step 4
Add another tbsp of oil and add diced onion. Cook until soft.
Step 5
Add pepper garlic and finely diced chilli and chilli flakes. Cook until pepper is soft. At this point throw in your cherry tomatoes, however many you would like so they can soften up.
Step 6
Throw the chicken and chorizo back into the pan to warm.
Step 7
Add the chicken stock, tinned tomatoes and tomato puree. Heat until it boils.
Step 8
Add the pasta, cover and let simmer for 10 mins.
Step 9
Add cream, spinach and simmer for another 5 mins.
Step 10
Top with cheese such as grated parmesan and serve.
