Step 1
Preheat oven to 425F
Step 2
Halve brussel sprouts and peel carrots. Cut carrots on the diagonal into 1 inch pieces. Roast until golden brown with some olive oil and salt.
Step 3
Once roasted, place carrots and brussel sprouts in bowl. Drain beans and add.
Step 4
Crumble feta and add to bowl. Loosely chop fresh herbs and add to salad.
Step 5
In a separate bowl, prepare the dressing. Finely chop shallot, then add dijon, red wine vin, honey, and salt. Slowly drizzle in 1/2 cup olive oil and mix.
Step 6
Dress salad, then top with Z'atar spice to serve.
