Instructions

Step 1
1. Divide the onion in half. Reserve half for the salsa & slice the other half into strips.
Step 2
2. Roast tomatoes,garlic cloves, and 1/4 onion using your preferred method. (Air fry at 360* F for 10 mins)

3. Blend the roasted vegetables with 1/4 c beef broth (or milk), 2-4 chipotles in adobo sauce, 3/4 c nonfat Greek yogurt, and low sodium chicken bouillon/seasonings to taste.
Step 4
4. Grease a pan with avocado oil spray and cook the onions for 3 minutes.
Step 5
5. Add in the shrimp and cook for 2-3 minutes or until they are pink. Season with salt and pepper.
Step 6
6. Bring the heat down to low and add in the chipotle sauce plus seasonings. Combine, cover, and cook for 5-6 minutes.
Step 7
7. Divide the shrimp into 4 servings (about .75 c) and add side of choice (.75 c white rice).
