5 ozlamb
cut into 1” cubes
½ tspsalt

½ Tbsptomato paste
1 tspworcestershire sauce
1.5 Tbspap flour
¼ cupguinness beer
½ tspthyme
2 cupsbeef broth
6 ozred potatoes
small, scrubbed & cubed
1carrot
peeled & cut into 1/2” slices
Instructions
Step 1
Season stew meat with salt & pepper: add oil & brown meat in pan. After browning meat on all sides, transfer meat to plate & cover for later.
Step 2
Add more oil to pan; cook onions, celery, & garlic. After vegetables become tender, stir in tomato paste & Worcestershire sauce.
Step 3
Stir flour into vegetables; cook (1 min.), stirring. Pour in beer & thyme; stir until beer reduces & thickens slightly. (The aroma coming from your kitchen will be incredible.)
Step 4
Add broth; return meat to pan. Cover & reduce heat to low. Simmer (25 min.) (This slow cooking of meat will yield wonderfully tender, almost melt-in-your-mouth meat.)
Step 5
Add potatoes & carrots to stew. Cover pot again; continue cooking (25 min. longer.) When done, meat should be tender & potatoes cooked through. ...If not, cover & continue cooking in 10 min. increments until cooked.
Step 6
When stew has finished cooking, spoon off & discard any grease from top. Enjoy!
