Instructions
Step 1
Boil the potatoes. Peel the medium sized potatoes, cut in half and add in water. Simmer for 20-25 minutes for perfect boiled potatoes.
Step 2
Finely chopped the onions. Add butter in a pan and cook on low heat until just become translucent. Remove from the heat and set aside.
Step 3
Once potatoes are boiled. Let's make filling. While potatoes are still hot , start mashing. You can use fork or potato masher but I prefer stand mixer. Add cheese ( I use mix of red Leicester cheese and mature cheddar cheese ) and mix it well until you notice it starts melting.
Step 4
Add cream cheese and sauté onions. Mix it well and don't forget to scrape the bottom.
Step 5
In the last add , milk , butter, white pepper and dijon mustard. Give it a last mix. Cover and set aside for at-least an hour or 2 until filling is completely cool down.
Step 6
Take a puff pastry sheet, cut in 4 inches square. Add filling around 2 tbsp in the middle of pastry sheet square. Smooth it out into square. Place another puff pastry part on top and seal with fork.Make some cuts on top. Egg wash it and transfer to lined baking tray. Sprinkle sesame seeds on top.

Bake in preheated oven for 25-30 minutes at 180c until rise perfectly and golden brown on top.
