Instructions

Step 1
Mix the coconut, oil, sugar and milk together in pan
Step 2
Warm slowly on a low heat (about 10-15 minutes), stirring constantly until the mixture starts to come together and the milk evaporates.
Step 3
It should not be soggy but it will be moist
Step 4
Allow the mixture to fully cool (be careful, the sugar will be very hot!) and then roll into golf ball size balls
Step 5
Roll in extra coconut and decorate with pistachio
Step 6
Place on a baking sheet and cool in the fridge for at least an hour, or overnight
